Plant-based chocolate chip cookies

Ingredients - Makes 32 cookies

 

1 pack Gusto Pastry, Scone & Pasta Flour

1 tsp baking powder

1/2 tsp salt

1/2 tsp baking soda

3/4 cup soft block plant-based butter

1 cup light or dark brown sugar (200 g)

1/3 cup granulated sugar (80 g/ml)

1/3 cup unsweetened apple sauce or soy milk

1 tsp apple cider vinegar

1 Tbsp pure vanilla extract

150 g dairy-free chocolate chips

 

Directions:

  1. Cream the soft butter & sugars together until light & fluffy, about 1 minute in a kitchen aid with a paddle attachment.
  2. Stir or whisk in the apple sauce or soy milk, vinegar & extract. 
  3. Mix flour & baking powder, salt & soda. Stir into the creamed mixture & add in the chocolate chips.
  4. Scoop into rounds, about 3 Tbsp each. Chill for at least an hour.
  5. Preheat oven to 350F. Line a cookie sheet with parchment paper and place cookies about 3" apart. Flatten the cookies a little to 1/2" or so.
  6. Bake for 12-15 minutes until light golden brown.
