Pizza pinwheel buns

 

One full park makes 12 rolls

Recipe 1/2 pack makes 6-8 rolls

You need

300 g Flatbread flour mix

170 g warm water (100-115°F)

2 1/2 tsp (7.5 g) yeast

2 tsp sugar

2 tbsp (28 g) softened unsalted butter

1 tbsp Apple cider vinegar or white vinegar

Directions

  1. In the bowl of stand mixer with a paddle attachment, pour in water. Add the sugar and yeast. Stir to dissolve & toss in the butter. (You can also use a handheld mixer to make.)

  2. Finally add the flour mix & vinegar. Beat on low at first then increase to medium (#4 on the kitchen aid) and beat for 2 - 3 minutes, scraping down sides a few times.

  3. Transfer the dough with a spatula to a clean work surface, dusted very lightly with flour or preferably tapioca or potato starch, and knead the dough until smooth & soft. (About 30 seconds.)

  4. Dust a piece of parchment paper, a counter or a silicon mat lightly with gluten free flour or even better is to use potato or tapioca starch. This will prevent it from sticking when you try to roll the dough. Place the dough onto the paper or mat.

  5. Use a rolling pin or your hands to flatten the dough to 1/3 to 1/2 inch thickness. Try to make it into a rectangle shape. Lightly dust the top of the dough with flour or starch if you need so you can roll or press the dough flat. It really shouldn’t need much as too much flour/starch altered the taste.

  6. Spread the pizza sauce lightly over the dough. Sprinkle with cheese & add your toppings of choice. Roll the dough lengthwise to make a big roll.

  7. Use a string of unscented dental floss to cut the rolls as you would cutting cinnamon rolls. Lay a piece of thread under a portion of the big roll and pull the two ends of the string together to cut the dough. Place on a baking sheet,

  8. Rising

    Let the pinwheels rest for 20-25 minutes or until they rise and puff. (I like to place in my oven, covered with a towel or plastic wrap, with the light on. Preheat oven to lowest setting (170°F) for ONE minute only, turn off and add a bowl of hot water on lowest rack. This creates a great proof box.

    Allow to sit in the oven like this and proof for 10 minutes. Remove and set on stovetop, if possible, while oven preheats.

  9. Bake at 400º F for 15-20 minutes (the actual baking time will vary depending on how wide and tall your rolls are.)

Bake it fresh. Love it.
