No rise fluffy donut bites

 

Yes! A no-rise dough that tastes light, fluffy & just like a donut. I still love my yeasted donut recipe so much, but these are just great to whip up for a weekend breakfast or even a dinner party dessert.

Must be comfortable working around hot oil, but I try to mitigate any hot splashes by gently dropping the dough round from the end of the scissors than from the piping bag! This little tip works nicely, as the scissors is long enough to give some distance between you the oil. Or, for a more rustic shape simply drop batter from a spoon.

Dredge the little hot rounds into cinnamon sugar or a simple glaze. Enjoy warm & fresh.

 

Ingredients

This recipe is 1/2 of a bag & makes 40 bites. Mix can easily be quartered see recipe below, to make 20. As these are best eaten fresh, gauge on your goal of going through 20, 40 or 80 & prepare accordingly.

 

Ingredients: makes 40

257 g Gusto Soft Roll Mix

1/4 cup sugar

2 tsp baking powder

2/3 cup milk

1 large egg, beaten

2 Tbsp very soft butter, not melted

2 tsp vinegar

 

2 cups oil for frying

 

Directions: Can be made in a mixer or by hand.

  1. In a Dutch oven or heavy medium saucepan, start heating oil until it reaches 340F,

  2. Mixer – In the bowl of a stand mixer with a paddle attachment, whisk flour, sugar & baking powder.

  3. Add milk, egg, soft butter & vinegar. Beat mix on medium speed for 1 minute or until smooth.

  4. By Hand – Whisk flour, sugar & baking powder well. Add the wet ingredients & beat very well with a wooden spoon until smooth & creamy.

  5. Place the mix into a piping bag or Ziploc bag that has been sprayed or brushed with oil. (This helps the mix exit the bag easily.)

  6. Once oil is at the correct temperature, place the bag over the edge of the pot, not directly above, this is to prevent splashing yourself with oil. Push out about a tablespoon of batter. Cut the batter at the tip of the bag with a scissors & gently lay into the oil. (see pictures)

  7. Fry for 1-2 minutes, until golden brown, drain on kitchen paper. While still warm roll in cinnamon sugar or a milk glaze. Serve warm.

128 g Gusto Soft Roll Mix

2 Tbsp sugar

1 tsp baking powder

1/3 cup milk

1/2 large egg, beaten (simply beat an egg well & weigh out 30 g. Use the rest for omlettes, egg wash etc.)

1 Tbsp very soft butter, not melted

1 tsp vinegar

 

2 cups oil for frying

Proceed as for recipe above.

Bake it fresh. Love it.
