Cheese & herb quickbread

 

Need a quick bread or savoury muffin to serve with soup, salad or just a snack? This can be ready in less than 30 minutes

Ingredients - Makes 12 muffins or 2 loaves 

500 g Gusto Pancake & Baking mix

3 large eggs beaten

1/2 Tbsp baking powder 

1/2 tbsp salt

1 1/2 cups milk plus 1 1/2 Tbsp vinegar (to make buttermilk)

1/2 cup oil plus 1 Tbsp

2 1/4 - 2 1/2 cups grated cheddar cheese

Add ins

1 tsp garlic powder, 2 Tbsp fresh herbs (rosemary & thyme) 

 

Directions

1. Preheat oven to 375F. Grease 2 9x5" loaf pans or line 12 muffin molds with paper liners.

2. In a medium mixing bowl combine flour, baking powder & salt. Add dried or fresh herbs, granulated garlic if using and cheese also. Toss in the flour.

3. In a separate bowl combine milk, vinegar, egg & oil.

4. Add the wet ingredients & mix until well combined.

5. Pour the batter into the muffin liners or divide in 2 between the loaf pans.

6. Bake in the center of the oven for 18-20 minutes for muffins. Top should be set & spring back when pressed & be golden brown. Bake for 40-50 minutes if making loaves. Transfer to a wire rack & allow to cool a little before slicing.

166 g Gusto Pancake & Baking Mix (1 1/4 cups)

1 egg beaten

1/2 tsp Baking powder

1/2 cup milk plus 1/2 Tbsp vinegar

3 Tbsp oil ( I like light olive oil)

1/2 Tbsp fresh herbs or 1 tsp dried plus 1/4 tsp dried garlic powder

3/4 cup grated cheddar cheese

1/2 tsp salt

Bake it fresh. Love it.
