No rise kefir flatbreads

 

Although I have a flatbread flour, I had to try this mix for a no-rise version and, it worked beautifully!

The other flour requires yeast (it is worth every minute of waiting) but, when you want a fast bread this is it! 

Just few simple ingredients & it's easily plant-based also.

 

 

Ingredients - Makes 8 flatbreads or 10 stuffed with cheese. 

 

420 g Gusto Artisan Bread & Pizza mix or 3 cups*

1 Tbsp baking powder

390 g kefir of choice or, mix 240 g water or 1 cup & 150 g or 3/4 cup plain yogurt

1 tbsp vinegar (optional) gives a nice taste and rise

 

*Can use cups but I recommend weighing. to avoid a wet dough that is harder to roll.

Small batch recipe for 2-3 breads below.

 

 

Directions

1. Blend everything together in a bowl until dough forms. Allow to rest 3-5 minutes to hydrate. Can also be made in a stand mixer with a paddle attachment, beat for 1-2 minutes on low.

2. Turn onto a lightly floured surface and gently bring together with a quick knead. Divide into 8, and shape into a ball.

3. Using a rolling pin, shape into rounds or tear drops, about 1/4" thick.

4. Heat a skillet on medium heat. Place a lid on top to heat it quicker, but do not use a lid to cover when cooking the flatbreads.

 

5. Place onto the hot pan and cook for 2 minutes, flip & continue cooking for 2-3 minutes more until slightly puffed & golden brown.

 

6. Cool on a wire rack a little & if desired brush with melted butter, garlic & cilantro etc.

7. Can also be stuffed with cheese, the edges folded over and sealed. Roll and fried in the same way as above instructions.

 

 

Enjoy fresh but best to freeze leftovers same day & heat up again in the microwave, from frozen, or on a hot skillet until steaming hot. If freezing always brush with oil before.

130 g kefir of choice or, mix 80 g water or 1 cup & 50 g or 1/4 cup plain yogurt

1 tsp vinegar (optional) gives a nice taste and rise

*Follow directions as above

 

Bake it fresh. Love it.
