Tortillas

 

I found that making these with water & soft butter was great, but doing all plain yogurt created an even better soft tortilla. The trick is to place in a plastic foodsafe bag when still hot. The few minutes of steaming gives a much softer tortilla than wrapping in a towel can. You can wrap in a towel and place the whole thing in a bag if desired, but the direct to bag trick is a winner.

Also, eat fresh or freeze when cool. Don't leave sitting at room temperature for long. They are best eaten fresh or straight from freezer to pan or microwave.

 

1 pack makes 12 9" tortillas

Small batch recipe for 4 fresh tortillas below.

 

Option 1: Mixer or Handmix/knead

420 g Gusto Artisan mix

400-420 g plain natural yogurt, not Greek*

*You could use Greek if that's your preference, but it needs to be watered down a little until it's more fluid and like a soft plain yogurt. Start with 400 g until dough comes together. If not then add a little more until a smooth ball forms.

 

Option 2: Needs mixer

 

420 g 1 package Gusto Artisan Bread Mix

195 g lukewarm water

75 g soft unsalted butter



Can be made by hand (no butter recipe) by blending with a fork, or with a stand mixer & a paddle attachment.

 

 


Directions

1.Mix all the ingredients until blended.

2. Preheat a frying pan or griddle once dough is mixed.

3. Turn dough onto a floured countertop & gently knead until smooth. About 30 seconds.

4. Divide into 12. (Or 4 if making a small batch.) Cover the remaining rounds.

5. Shape into a neat ball by bringing the edges in from the center & pinching together. Flour rolling pin.

6. Roll thinly, seam side down, turning & adding only a little more flour as needed until paper thin. The tortilla can also be rolled very quickly between 2 sheets of parchment paper to avoid adding flour, or on a silicone mat.

7. Lay down onto the hot pan & peel back the parchment if the dough stuck. If it won’t peel off just allow it to cook & then remove.

8. Cook 40-50 seconds on one side, turn, and cook a further until dough is set and no opaque spots. Transfer to a clean towel or preferably to a ziploc bag. Wrap to keep warm but even better, while still a little warm see tips below.

Tip:

While still warm transfer to a plastic or Ziploc bag or foil pouch to retain heat. This is the secret to a super soft tortilla.


Storage


Eat fresh, or freeze once cooked & cooled. Do NOT leave at room temperature.

Reheat on a hot skillet until soft, 20-30 seconds. Or, Microwave in 10 second intervals until soft, slightly warm but not steaming hot.

 

Bake it fresh. Love it.
