Cheese twists
Makes 16-20 twists
Cheesy twists or cheese straws, whatever you wish to name them they are buttery, crunchy pastry layers lined with spicy mustard, salty cheese, sweet brown sugar, chili & herbs.
You can make them thin or wide, or add in other desired flavors to suit your tastes.
Try cheddar & chive, mozzarella & sundried tomatoes or pesto & Parmesan. Can also be made sweet with cinnamon, brown sugar & spices.
Makes 16-20
Ingredients:
1 recipe rough puff pastry rolled about 9 x 13”
1 1/2 tbsp honey mustard or wholegrain mustard
1 tbsp brown sugar
1 tsp smoked paprika
1 tbsp fresh thyme or 1 tsp dried herbs
1/2 crushed chili flakes or to taste
1/2 cup grated Parmesan or any hard cheese
Directions:
- Preheat oven to 400°F. Line a baking sheet with parchment paper. 
- Roll the puff pastry on a floured surface to ⅛-inch thick rectangle. 
- Brush the puff pastry with the mustard. 
- Spread the parmesan on one half of the pastry. Sprinkle with sugar, paprika, chili & herbs. 
- Fold the top piece of puff pastry over the cheese part. Press to flatten. 
- Roll the puff pastry again to ¼-inch thick. 
- Cut the pastry into ½-inch thick strands. You can use a ruler or a cutting board to get them straight. 
- Gently twist each strand (in the opposite sides) and place on a baking sheet. Press the ends so the strands stay in place. 
 Bake the cheese sticks for 15-20 minutes or until golden brown.
- Allow to cool.
