Asparagus bundles

Such a simple assembly job here. Tender stalks of asparagus roast, surrounded by flaky puff pastry in this appetizer bundle. 

Enjoy them as snack, take to a brunch party, or serve at any celebratory meal with just a little work. 

Ingredients:

You’ll need:

1 x recipe of puff pastry

About a pound of asparagus 

Plain Cream cheese or chive & garlic (optional)

1-2 tbsp olive oil

3/4 - 1 cup grated hard cheese

*Wash for tops & sesame seeds (optional)

*I used water, soy milk & a touch of maple syrup

Directions:

  1. Prepare the asparagus by cutting off the stems and sprinkling stalks with a little olive oil, salt and pepper.

  2. Roll out the puff pastry and use a pizza cutter or knife to cut into 8 rectangles. Spread cream cheese onto each rectangle, if using. Sprinkle with grated cheese. 

  3. Stack 3-4 asparagus stalks diagonally across each rectangle. 

  4. Take the top left edge of puff pastry and fold over the bottom right edge to make a bundle. Press it together tightly and seal. Repeat for each rectangle.

  5. Brush pastry with wash, then sprinkle with sesame seeds & salt. Place pastries on a half sheet pan. Bake in a 425 degree oven for 10 to 15 minutes until pastry is golden brown and puffed to perfection!
