Easy waffles

Makes 18-20 waffles

This is my fast & simple go-to recipe when I want a quick breakfast.

Depending on your iron and how much butter or spray you use, you can have crispy waffles or cook for less time for a softer waffle.

Ingredients:

  • 255 g (1/2 pack) Gusto cake & waffle mix flour

  • 1/2 tsp baking powder (optional)

  • 2 eggs or egg substitutes*

  • 1 teaspoon pure vanilla extract

  • 4 tbsp (1/4 cup) butter melted

  • 1 1/2 cups milk of choice

  • 1 1/2 tbsp apple cider vinegar

*Eggs can be replaced with commercial egg replacer such as Bob’s Red Mill, Just Egg or even a flax or chia egg here.

Directions:

  1. Mix the milk & vinegar together to create your buttermilk

  2. Preheat your waffle iron and spray with cooking spray or rub with melted butter.

  3. Place the mix in a medium bowl.

  4. In another bowl, beat the eggs with a mixer until light, fluffy and pale.

  5. Add the vanilla to the egg.

  6. Mix the egg & melted butter into the dry mixture.

  7. Stir with a spatula until barely smooth but don’t overmix.

  8. Let mix sit for 5 minutes before adding to the waffle iron & following manufacturer’s cook until golden brown.
