Chocolate cupcakes (Hack)

Makes 36 Cupcakes or 2 x 9” round cakes (full pack)

This simple one-bowl mix (& baking hack) creates delicious, tender & delectable cupcakes.

It can be made with an egg-based mayo—I recommend the creaminess of an avocado oil base—or any of the plant based ones work too.

One full pack makes 36 cupcakes

Recipe for 1/3 pack

Ingredients:

255 g Gusto Cake & Waffle Mix

3/4 cup plus 2 tbsp sugar

160 g (3/4 cup) Mayonnaise of choice

220 g (1 cup) water

1/3 cup unsweetened cocoa powder

1 tsp vanilla extract

Directions:

  1. Preheat the oven to 350°F.

  2. Line a muffin mold with cupcake liners. Spray with non-stock spray (optional)

  3. In a large mixing bowl add flour, sugar, mayo, water & vanilla.

  4. Mix with a whisk until smooth.

  5. Spoon or scoop into the cupcake liners about 3/4 full.

  6. Bake for 22-26 minutes until a toothpick inserted comes out clean. Cool on a wire rack.

  7. Frost as desired.
