Belgian waffles

Makes 8-10 waffles

This is a classic Belgian Waffle with the whole separated egg whites formula that makes for the perfect waffle, only a gluten free version.

This recipe was inspired by a blog post by Fraiche Living’s Tori. I saw this one day on her Insta stories and had to try it with my mix. It’s a winner! And, also works great with a homemade plant-based buttermilk.

The whipped egg whites here can be beautifully made with my vegan version, with aquafaba, on my blog too. The results are incredible!

Ingredients:

You’ll need:

  • 255 g Gusto Cake & waffle mix

  • 1 tsp baking powder (optional)

  • 2 teaspoons vanilla (optional)

  • 2 eggs separated

  • 1 1/4 cup milk

  • 1 tbsp white or apple cider vinegar

  • 3 tablespoons melted butter

Directions:

  1. Make buttermilk by adding milk &vinegar together.

  2. Beat the egg whites with an electric mixer on high until stiff.

  3. In a separate small bowl, whisk together the vanilla, egg yolks, buttermilk and melted butter until combined. Stir the wet ingredients into the dry and mix until just combined: fold in the egg whites.

  4. Cook the waffles in a preheated waffle iron according to the manufacturers directions until golden brown and enjoy!
